Mexican Chicken Casserole

This recipe for Mexican Chicken Casserole serves 6 people.

(15 minutes to prepare, then cook for 65 minutes)

Ingredients you'll need:

  • 450 g chilli beans, can
  • 1 ½ tsp mexican chilli powder
  • 1 tbsp oil
  • 1 onion
  • 400 g tinned tomatoes, in juice
  • 1 cup of cheese, grated
  • 2 cloves of garlic
  • 8 chicken drumsticks
  • 1 packet corn chip

How to make Mexican Chicken Casserole:

  1. Peel and chop the onion. Crush, peel and chop the garlic.Heat the oil in a frying pan and saute the onion and garlic until the onion is clear. Add the chilli powder and cook for 1 minute. Remove the skin from the drumsticks. Place chicken in the casserole. Add the chilli beans. Chop the tomatoes roughly, removing the core. Pour tomatoes and juice over the chicken. Cover and cook at 180°C for 50 to 55 minutes. Arrange corn chips on top of the casserole. Sprinkle with grated cheese and place under the grill until the cheese is melted and golden. Serve immediately.
