Italian Tomato Casserole

This recipe for Italian Tomato Casserole serves 4 people.

Time required: 1 hour and 5 minutes
(10 minutes to prepare, then cook for 55 minutes)

Ingredients you'll need:

  • 1 tsp dried thyme leaves
  • 1 pinch of ground black pepper, fresh
  • 1 tbsp oil
  • 1 onion
  • 440 g tinned tomatoes, in juice
  • 3 tbsp tomato paste
  • 1 pinch of salt
  • 2 cloves of garlic
  • 1 pinch of herb, fresh
  • 4 whole chicken legs
  • 1 tsp dried basil

How to make Italian Tomato Casserole:

  1. Peel and finely chop the onion. Crush, peel and chop the garlic. Heat the oil in a frying pan and saute the onion and garlic until the onion is clear. Place in a casserole dish. Brown the chicken in the pan. Place in casserole. Pour tomatoes and juice into casserole, breaking up the tomatoes with a wooden spoon. Mix in tomato paste, thyme and basil. Season to taste with salt and pepper. Cover and cook at 180degrees celsius for 50 to 55 minutes or until chicken is cooked. Garnish with fresh herbs.

Recipe Notes:

Variation - you could use a can of crushed or diced tomatoes instead of whole tinned tomatoes.
