Curried Chicken Soup

This recipe for Curried Chicken Soup serves 4 people.

Time required: 50 minutes
(20 minutes to prepare, then cook for 30 minutes)

Ingredients you'll need:

  • 50 g butter
  • 2 cloves of garlic
  • 2 tbsp plain flour
  • 5 cups of chicken stock
  • 2 medium parsnips
  • 1 tbsp curry powder
  • 2 onions
  • 1 coriander, Chopped fresh or parsley
  • 1 cup of boneless chicken, cooked or uncooked

How to make Curried Chicken Soup:

  1. Peel and roughly chop the onions. Crush, peel and chop the garlic. Scrub and chop the parsnips. Melt the butter in a saucepan. Add curry powder and saute the onion, garlic and parsnips until the onion is clear. Stir in the flour and cook until the mixture bubbles. Stir in the chicken stock. Bring to the boil and simmer for 15 minutes or until the parsnips are cooked. Pour the mixture into a blender and blend until smooth. Return to the saucepan, add the chicken and cook for another 10 minutes or until the chicken is cooked. Serve garnished with chopped coriander or parsley.

Recipe Notes:

This soup uses parsnips. They are not a flavour enjoyed by everyone so replace with potato or kumara if preferred. Use any cut of boneless chicken for this recipe.
